Vermilion - This intimate, fine-dining restaurant serving modern European cuisines seats 32. Coffee-and-cream-colored decor, and silver-plated cutlery on double-layered table linen. Menu choices include Venison Carpaccio followed by Wild Sea Bass with Yukon Gold Purée, Langoustine, and Fennel Bisque. Dinner, Wednesday through Sunday North Bridge Brasserie - Mixing old and new decor, this large and informal brasserie features a steel-and-glass bar, black-leather stools, 19th-century oak paneling, and giant marble columns supporting an elaborate plasterwork ceiling. Tables and leather dining chairs are scattered on two levels, and guests take in street views. Open for breakfast, lunch, dinner, and drinks every day.
