The Terrace - This informal restaurant, with views of Edinburgh Castle, offers a lunch buffet of Scottish and international cuisine. Dinner buffets are also available and on Sundays there is a jazz brunch with a nod towards younger diners with a magician and a ‘pay as you weigh’ children’s menu.

The Grill Room - Overlooking the Terrace and behind a glass screen is the Grill Room. This fine dining restaurant specializes in sourcing the best of fresh Scottish produce and producing a range of classic regional dishes such as Aberdeen Angus beef, fresh West Coast seafood and seasonal game. Lunch at the Grill Room is popular with the city’s business community, while the atmosphere is more romantic at night. The Grill Room will be closed for refurbishment January 1–31, 2005.

The Exchange - The Exchange is a bar/café open 24 hours, with a buzzy ambience. Edinburgh’s business community have informal meetings here over coffee and smart ladies pop in for Afternoon Tea. This dark and comfortable space offers sink-in chairs, bundles of newspapers and a range of single malt Scottish whiskies.

Santini & Santini Bis - The menu offers dishes such as Sea Bass with Rosemary and Balsamic Vinegar and Beef Carpaccio with Mushrooms and Parmesan. The decor is minimalist without being cold, with soft leather and soothing browns. The recently added Santini Bis has snappier service and an abridged menu that includes pizzas and panini. Both sections offer pasta, made daily on the premises. Open for lunch and dinner.
