Mosaic - Air-conditioned restaurant with blue-and-white walls, tan-marble floor, sheer blue curtains, white table linens, high-backed cushioned chairs. American/English breakfast menu with Bajan touches such as fried flying fish. Lunch menu choices include fajitas, ribs, steak, pepperpot, Thai shrimp, smoked baby squid, grilled lobster, mussels in garlic-flavored beer, and striploin steak with red-onion crust. Dinner menu includes smoked duck breast, onion-goat cheese pizza, chilled cucumber soup with crème de menthe, lobster-shrimp thermador, and Sichuan-seasoned yellowfin tuna with fried polenta.

Mosaic Bar - Open-air poolside bar under blue awning serving tropical drinks and food such as wild-mushroom burger, curried chicken roti, skewered flying fish with green-apple salsa, pita-bread pizza, and smoked mahi mahi, chicken breast, steak, and pork chop. Open for lunch and dinner.
